Which fat is the best fat for frying? I stay away from animal fats for obvious reasons, preferring instead coconut or canola oil. Chilean shock-artist Marco Evaristti wanted to try something a little different. He underwent liposuction and saved his own fat to play with.
He cooked up 48 meatballs in the fat and served them to friends atop agnolotti pasta at a gallery in Santiago.
“The question of whether or not to eat human flesh is more important than the result,” he said, explaining the point of his creation.
“You are not a cannibal if you eat art,” he added.
The remainder of the meatballs are to be canned and sold for $4000 dollars for 10.

Someone at my work said that they’d eat human cheese the other day. I thought of you.
